Beef - We take great pride in knowing the origins of our animals and the ranchers that raise them. We proudly offer beef that has been dutifully cared for by family-owned ranches. It may cost us a little more to provide the absolute best local beef available, but we know it’s worth it. We partner with local ranches Black Hill Ranch in Kenney, Texas and 44 Farms in Cameron, Texas. Black Hill Ranch’s meticulous dedication to natural farming and grass feeding is unparalleled. 44 Farms, the premier registered black angus operation in Texas, is dedicated to providing great tasting marbled beef that has never (ever) been administered hormones, antibiotics, or animal by-products and adhering to a strict set of animal welfare protocols that places an extraordinary focus on livestock health, nutrition, and overall well-being. Chickens - We source only natural whole chickens for our Dixie fried chicken and our roasting chickens.
Hot Dogs - We don't pretend with our dogs! They are not sausage, nor are they "hot dogs with dried fruit" in them. They a true, natural casing, "snap skin" hot dogs made with Nebraska beef and pork. Swimmers & Shells - We use Galveston local fishing boats from Katie's Seafood, which provide us great, daily, fresh and seasonal gulf fish along with our Texas oyster company Southwest Seafood. We are also proud to serve the finest regional fish and shellfish, such as Wild Striped Bass and George's Bank All-Natural Sea Scallops from
M. F. Foley Seafood in Boston/New Bedford, Massachusetts. Foley Seafood is a pioneer in that most of the fish we get from them is traceable down to the location it was caught and by what boat and on what date simply by clicking to a tracking number online. This type of technology increases not only awareness but makes it somewhat personal because we know the entire process of how and where and who took care of this precious product.
As a growing company we believe in stewardship of our oceans so we currently strive to more strictly follow the balanced and science-based recommendations of NOAA's Fish Watch. Fries - We use only Bintje and other season specific Burbank potatoes for our freshly cut fries.
Oils – We only use organic cottonseed oil for our fried items.
Sweets - We craft and bake our own cakes and pies at our sister pastry shop, Petite Sweets. Our desserts use real fruits, Mexican chocolates and other natural ingredients.
